What kinda hacking can be done for each Security Program, I.e with Fairfight you can't rage hack because stats are looked at ect or with VAC you can do whatever the hell you want.

I'm just curious what games are stricter with what you should do.

Every game Anti-Cheat system is sort of a strict one,sir. We take serious measurements against those systems to provide the best experience for our AimJunkies users. For example in Battlefield 1, If FairFight sees you being suspicious it would take a screenshot of what and how you are doing in-game, so our coders have made that those screenshots would be cleaned and to inform you that you should probably lower your settings.
